Spicy Cucumber Salad

Ingredients

For the Salad:

  • 1 large cucumber

For the Sauce:

  • 1 garlic clove, grated or minced
  • 2 Tbsp toasted sesame oil
  • 1 Tbsp soy sauce or tamari
  • 1 Tbsp rice vinegar
  • 1/2 tsp chile powder
  • 1/2 tsp black sesame seeds
  • 1/2 tsp plain sesame seeds

Instructions

  1. Prep the Cucumber: Dice the cucumber into bite-sized pieces and place them in a medium-sized bowl.
  2. Make the Sauce: In a separate, smaller bowl, mix all the sauce ingredients together.
  3. Combine: Pour the sauce over the cucumbers and gently mix until well coated.
  4. Serve: Enjoy as a snack, appetizer, or side dish.
